Cheese Puffs

Serves: 2 to (4)
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Number of Cheese Puffs: 10 (20)
Ingredients:
35g (75g) Gruyere cheese
2 (4) eggs
80ml (160ml) water
40ml (80ml) milk
60g (120g) butter
70g (140g) plain flour
1 pinch salt
1 egg for glazing

Ingredients:
100g Gruyere cheese
6 eggs
240ml water
120ml milk
180g butter
210g plain flour
1½ pinches salt
2 eggs for glazing

MAGIMIX 5200:
Serves: 8
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Number of Cheese Puffs: 40
Ingredients:
140g Gruyere cheese
8 eggs
320ml water
160ml milk
240g butter
280g plain flour
2 pinches salt
2 eggs for glazing

Method (all Magimix Food Processor models):
  1. Preheat oven to 210 deg C (gas mark 6/7).
  2. Lightly butter a baking tray.
  3. Grate the cheese into the bowl using the 2mm disc and set aside.
  4. Add the water, milk, butter and salt to a saucepan.
  5. Bring to the boil whilst stirring with a whisk to melt the butter.
  6. Remove from heat.
  7. Tip in all the flour, stirring vigorously with a wooden spoon.
  8. Return to the heat and simmer for approximately 1 minute.
  9. Transfer resultant dough to bowl fitted with dough hook.
  10. Switch on and add eggs one by one via feed tube.
  11. Switch off.
  12. Use spatula to scrape side of bowl and push dough down.
  13. Add ¾ of the grated cheese.
  14. Blend for 5 seconds.
  15. Pour a little water onto baking tray.
  16. Pipe or spoon dough mixture in small mounds, each of about 30mm in diameter.
  17. Brush with beaten egg yolk, flatten slightly, and scatter with remaining cheese.
  18. Bake for approximately 20 minutes.
  19. Leave to cool on a wire tray.
  20. Serve warm.
