Flemish Leek Tart

Serves: 2 to (4)

Rising Time: 1 hour
Cooking Time: 40 minutes
Ingredients:
300g (400g) shortcrust pastry
1 (2) leeks
25g (40g) butter
1 (2) eggs
60ml (100ml) creme fraiche
30g (40g) grated gruyere cheese
salt and pepper to taste

Ingredients:
600g shortcrust pastry
3 leeks
50g butter
3 eggs
125ml creme fraiche
55g grated gruyere cheese
salt and pepper to taste

MAGIMIX 5200:
Serves: 8
Preparation Time: 50 minutes
Rising Time: 1 hour
Cooking Time: 50 minutes
Ingredients:
1300g shortcrust pastry
4 leeks
75g butter
4 eggs
150ml creme fraiche
80g grated gruyere cheese
salt and pepper to taste

Method (all models):
  1. Make pastry according to shortcrust pastry recipe.
  2. Preheat oven to 210deg;C (gas mark 6/7)
  3. Wash leeks and discard the green part.
  4. Cut into thin rounds using the 2mm slicing disc
  5. Melt butter in a frying pan.
  6. Add the leeks, stir, then pour in a little water.
  7. Soften over a low heat for 15 minutes, making sure they don't brown.
  8. Add a little more water if necessary.
  9. Season.
  10. Line a quiche tin with the pastry.
  11. Prick the base with a fork.
  12. Cover with a circle of baking parchment covered with beans or rice.
  13. Bake blind for 10 minutes.
  14. Put the cream, eggs, salt and pepper in the bowl fitted with metal blade.
  15. Blend for 30 seconds.
  16. Take the pastry case out of the oven.
  17. Remove the parchment and beans (or rice).
  18. Arrange the leeks on the bottom.
  19. Cover with the egg and cream mixture.
  20. Scatter with grated cheese and bake for 30 minutes.
  21. Serve piping hot.
