Roast Provencal Vegetables

Serves: 2 to (4)
Preparation Time: 10 minutes
Cooking Time: 50 minutes
Ingredients:
250g (350g) tomatoes
½ (1) red pepper
½ (1) green pepper
1 (2) courgettes
½ (1) aubergine
40g (75g) black olives
3 (6) garlic cloves
thyme, basil to taste
olive oil to taste
salt and pepper to taste

MAGIMIX 4200:

Cooking Time: 60 minutes
Ingredients:
500g tomatoes
2 red peppers
1 green pepper
2 courgettes
1 aubergine
100g black olives
8 garlic cloves
thyme, basil to taste
olive oil to taste
salt and pepper to taste

MAGIMIX 5200:
Serves: 8
Preparation Time: 20 minutes
Cooking Time: 60 minutes
Ingredients:
650g tomatoes
3 red peppers
2 green pepper
3 courgettes
2 aubergines
150g black olives
10 garlic cloves
thyme, basil to taste
olive oil to taste
salt and pepper to taste

Method (all models):
  1. Preheat oven to 210°C (gas mark 6/7).
  2. Wash and dry tomatoes, courgettes and aubergines.
  3. Slice separately using 4mm slicing disc.
  4. Wash, de-seed and slice peppers.
  5. Arrange alternate layers of tomatoes, aubergines, courgettes, peppers and unpeeled garlic cloves in an oven dish.
  6. Scatter with black olives, thyme and snipped basil leaves.
  7. Drizzle liberally with olive oil.
  8. Season with salt and pepper.
  9. Bake in oven for prescribed time, remembering to add a glass of water midway through to prevent vegetables from drying out.
