Ratatouille

Cooking Time: 50 minutes
Ingredients:
150g (250g) courgettes
300g (500g) tomatoes
1 (2) onions
½ (1) aubergine
½ (1) pepper
1 (2) garlic cloves
bay leaves to taste
thyme to taste
olive oil to taste
salt and pepper to taste

Ingredients:
375g courgettes
750g tomatoes
2 onions
2 aubergines
2 peppers
3 garlic cloves
bay leaves to taste
thyme to taste
olive oil to taste
salt and pepper to taste

MAGIMIX 5200:
Serves: 8
Preparation Time: 35 minutes
Cooking Time: 1 hour
Ingredients:
500g courgettes
1kg tomatoes
3 onions
2 aubergines
2 peppers
4 garlic cloves
bay leaves to taste
thyme to taste
olive oil to taste
salt and pepper to taste

Method (all models):
  1. Wash vegetables.
  2. De-seed peppers
  3. Separately slice onions, courgettes, aubergines, tomatoes and peppers using the 4mm slicing disc.
  4. In a large pan, brown onions, garlic (halved) and peppers in a little olive oil and remove from pan.
  5. Fry courgettes and aubergines.
  6. Set aside.
  7. Add tomatoes to pan and cook for 10 minutes.
  8. Add back all vegetables to pan.
  9. Season with the herbs.
  10. Stir frequently with wooden spoon.
  11. Simmer without lid for 40 minutes.
Alternatively, you can put the vegetables through the 2mm slicing disc to make a sauce.
